This is what the past week looked like.

I made these salsa verde chicken enchiladas (without adding in the tortillas) with the avocado cream sauce from this recipe and made soft shelled tacos.
They were a big hit and I was pretty impressed with myself. :)
I'm still on my organization/purging journey and the guest room closet in the basement was next on the list.

G thinks we should keep the sleeping bags that I wanted to donate.
My camping days are behind me, but he thinks we might need them.
So we'll keep them for now and revisit in a year, ha!

I had sausage and potatoes I wanted to eat up so I asked ChatGPT what I should make with those ingredients and it suggested this one pan roasted chicken with sausage and potatoes recipe and it was delightful and so easy.
I didn't add the chicken and we didn't miss it.

I love Gary, his husband (they are great follows on insta!) and travel so of course I enjoyed his book.
G asked about the book and I said Gary does a ton of research before ever stepping into a restaurant and is very particular about where he sits in a restaurant.
G said that sounds like someone he knows. ;)

I continue to be impressed by non-alcoholic wine.

My dad was back doing what he loves, teaching Sunday school, after a four month break fighting cancer.
The whole family came to celebrate and it was our first time all together since week 4.
It was such a special day and an answer to prayers.
Why do they look so grown up here?
Celebrating so many things.
My dad being done with chemo and radiation, Eric turning 40, Brad getting a new job, all being together again...
My heart was so full.
