Life Lately: Week 18

 This is what the past week looked like.

Happy May!

A little whimsy spotted on my walk.

Michigan, your spring collection is gorgeous. 

Salmon bowl:

Costco frozen salmon thawed in soy sauce and garlic for 8 hours in the fridge

Baked in the oven for 15 minutes at 450 degrees

Served over cauliflower rice with cucumbers, carrots and avocado

I enjoyed my Starbucks dark roast, but this will forever be my favorite.

See also: Since I'm drinking less caffeine my ground coffee supply is lasting so much longer.

Another day, another salmon bowl.

I ate the leftover salmon with cauliflower rice, carrots, cucumber and topped it with dill dip.

Here comes the sun.

We ate at The State Room with our neighbors. 

Fun fact: I lived in the dorms across the street 21 years ago (!!).

The steak was AMAZING.

Another day, another reason to eat dill dip.

This time with carrots, tomatoes and cucumbers for an afternoon snack.

Greek bowls for lunch.

Chickpeas, cukes, tomatoes, feta and balsamic vinaigrette.

This is not an ad, but G and I were feeling uninspired with cooking lately so a Hello Fresh coupon caught our eye. 

I read the recipe card to G and felt like I was watching a cooking show.

Ginger Chicken and Rice Bowls.

The verdict? DELICIOUS.

Welcome back!

Pop of pink.

Friday night we ordered takeout and G and I shared the most amazing goat cheese burger.

This is a fave Aldi find that is dry, crisp and refreshing.

Hello Fresh's Southwest Stuffed Zucchini Boats.

So flavorful!

This was easy and we will be making this again.

If I could turn back time. 

I spent Saturday weeding the beach, but the view helped me get through the chore. 

Hello Fresh's Yogurt-Marinated Chicken and Garlic Sauce.

We will make this recipe again too.

G and I went to Crunchy's with my coworker and her husband.

The karaoke is just as good as I remember it.

Leslie talked me into doing karaoke with her. 

We had the whole bar singing along with us, ha! 

We went to my parents' for Mother's Day and drank margaritas. 

Brad brought my mom these beautiful flowers.

These kiddos crack me up.

Ella loves playing soccer with G (and vice versa). 

Soccer became a family affair.

My girl.

Happy Mother's Day to the best mom a girl could ask for.

She is truly the kindest, sweetest, most generous person I know.

I'm so glad she's mine.

A relaxing evening on the porch to end a fabulous week.
