Menu Monday: South Beach Edition

Two months. I only have two months to lose these stinkin' pounds. Drastic times call for drastic measures. It turns out the reason I'm not seeing a loss even though I count calories religiously is because I'm eating way too many carbs. Enter the South Beach Diet. Garth and I have done it before and had great success so it seemed time to do it again.

Yum! It is going to be a good, delicious week. It was off to a great start on Sunday. I have been enjoying the leftover casserole for breakfast every morning. The plan for the weekend  is to a lot of grilling and sitting on the deck. I plan to make Tomato and Feta Stuffed Chicken with the leftover feta from my breakfast casserole.

Another favorite of ours is Grilled Chicken Kababs. So easy. So delicious. Perfect for a week or weekend night sitting on the deck!

I think I'm having the same issue with carbs...ugh losing weight can be so frustrating sometimes!

Do you ever find that you get crabby when you eliminate carbs? I've done a couple low carb and no carb diets and I get a little testy when I'm on them. But I do lose faster!
