Menu Monday!

Thanks for letting me vent on Friday. I appreciate all of your encouragement. I feel so much better today. I am ready to do this thing! I am ready to have the best week ever! The fridge is stocked with fruits, veggies, almond milk, chicken, and ground turkey. My pantry is full of granola, KIND bars, oatmeal, Triscuits, rice cakes, peanut butter, and whole grain bagel thins.

Here is what we have on the menu this week:


Sunday - Spaghetti with turkey meatballs. We haven't had pasta in forever and it hit the spot. We used Classico Garlic Tomato Sauce, onions, Jenny-O turkey meatballs, and whole wheat pasta. We actually made this Friday night and ate leftovers Saturday for lunch and Sunday night. I love a meal that lasts and lasts.

Monday - Grilled chicken and brussel sprouts. Simple, healthy and delicious. I can't believe I just realized this year how much I love brussel sprouts. Obsessed.

Tuesday Teriyaki Chicken. I'm excited to try this recipe in the crock pot. I always get excited to try new ingredients in the crock pot. I will use brown rice and serve with edamame.

Thursday - Salsa Chicken. It is a favorite over here. I actually add curry instead of taco seasoning and serve it over brown rice with a salad.

Friday - Green Chile Enchilada Soup. Holy yum! This looks so good! I always want to try and create something savory on Friday nights to prevent us from ordering takeout. I just need to watch my portions on this one and fill up on a salad first.

Saturday - Out to dinner. Date night after the 5k!

Would you believe I've never tried brussel sprouts? I need to try them this year! I love veggies so I'm sure I would like them.

Mmm...looks yummy! We're having pasta this week too and it's been awhile so I'm excited!

And I also need to try brussel sprouts, I've heard roasting them makes them really yummy so I need to try them out. Do you buy frozen ones?

Mmm, everything looks great! We love brussel sprouts, and spaghetti with meat/turkey balls (and whole wheat pasta :)) is always a fave!
