Menu Monday!

How is it Monday already?! The weekend was fun. It was pretty low key which I love. A day of nothing and no where to be and no make up is perfection. We did get to see my aunt and cousin from out of town that we haven't seen in a while so that was fun.

I know I had tried to stick to a South Beach style of eating last week, but it was too hard. I realized as long as I kept calories around 1200 I could enjoy carbs. Yay! Here is what is on the menu for this week:

Monday - Goat Cheese Quesadillas. I love Rachel's blog and I'm excited to try out this dish tonight.

Tuesday - Salsa Chicken. A favorite around here because it's delicious and easy. We generously season the chicken with curry powder.

Wednesday - Leftovers.

Thursday - Crock pot Chicken Fried Rice. Garth was intrigued by this recipe and I am always game for a crock pot meal!

Friday - Date night / Cheat night!

These look like awesome, healthy options. I love the South Beach, but I've noticed it really is not good for everyone!

Just a helpful hint. I'm on the sae journey as you and thought I would mention try not to eat so many carbs at dinner EVERY night. One or two maybe but try to get your carbs in at lunch or breakfast! See if that helps the scale move. It has for me!
