Menu Monday

I'm going to do things a bit differently. I'm going to post the meals we ate LAST week with reviews and pictures. This will hopefully keep me accountable to keep on cooking. It also offers some flexibility since we don't always feel like the meal I planned for Monday and eat it on Tuesday instead. Living life on the edge, I know.

Monday - Mexican Bowl. An oldie but a goodie. It's easy, nutritious, and filling. I just make Uncle Brown's instant brown rice. Mix it with black beans and avocado. I'm sure you could add corn and green chiles but I'm a plain Jane. And I forgot to take a picture, oops.

Tuesday - Garth's South African Beef Stroganoff. I came home to my man cooking a lovely meal. Best. Surprise. Ever. This is actually not the recipe. I don't know the recipe. Garth just makes it after watching his mom make it and it is an incredible meal!


Wednesday - Leftover beef stroganoff.


Thursday - Crock Pot Chicken Enchiladas. I was so excited to try this recipe. I have been wanting to make enchiladas for a while now, but hadn't decided on the perfect recipe. As soon as I read the ingredients to Garth he replied, "You must make that!" It was incredible.

Friday - Date night. We had take out sushi and it was delicious. I was so hungry I forgot to take a picture. It was the perfect way to spend a Friday night. Sushi with my man and HGTV.


Saturday - We had my brother and sister-in-law over and they spent the night. We always have so much fun with them. They brought stuffed olives, cheese and crackers. Amazingness! We broke out the fryer and fried zucchini and onions. Delicious!

Sunday - I made my breakfast casserole for all of us on Sunday and it was a hit. I'm looking forward to the leftovers Monday morning. The rest of the day was pretty low key and we just ate leftovers from yesterday.
