This is my go-to breakfast casserole. I love this recipe because it is so versatile. I usually swap the turkey sausage for spinach and the cheddar cheese for feta. On Christmas I made this and added potatoes. I have also used broccoli instead of the turkey sausage with cheddar cheese. All delicious. But this weekend I wanted to use up some turkey sausage I had in the freezer so I made the recipe the way it was intended and it was divine. It was the perfect meal for Garth after running 16 miles. And it makes so much we have been eating it for breakfast ever since. I love leftovers! It is such an easy recipe to throw together which may be my favorite part of all.
