Taco Casserole.



Last night I made taco casserole. I haven't cooked in a long time and I was slightly nervous considering I don't even know how to cut an onion and I have never cooked chicken before. I know, major wife fail.



But I was determined to do this by myself. Garth was preoccupied with a home improvement project (more on that tomorrow) so I cranked up the country tunes and set to work. The recipe was not that difficult and I figured out how to cut an onion and cooking chicken was relatively easy.


I was very pleased with the outcome.
It tasted even better than it looks! I know most of you probably do this five or more times a week but this was a huge accomplishment for me. When Garth said he loved it I felt like I had just run a marathon. It was that kinda high, not that I would know since I have never run a marathon. But I digress...I felt like an awesome wife!


Tonight we are having organic cheese and pesto pizza (it's small group night so I need something fast) and tomorrow I'm making chicken and rice. I might even be enjoying cooking. Woohoo! Finally, right?

Haha, girl, I totally understand that feeling. Nothing like making your man happy with a dish that YOU concocted when you're not an experienced cook! Looks scrumptious. :)
