21 Day Fix Recap/Results: Week 3

I don't notice a big difference in my before and after pictures but I plan to keep going and to keep taking pictures each week. I lost my before pictures from when I started this in January and I'm so bummed because there is a HUGE difference in those pictures and my pictures now.

I'm not going to lie. I am surprised I only lost a pound when cutting out alcohol and processed foods. I thought I would see a four or five pound loss each week. So, yeah. My expectations were high. I feel great though. I weigh in on Saturdays so I haven't weighed in this Saturday yet but I did veer off plan a bit this past week. We were busy. Life happened. I don't regret it. I was still mindful of portions and stuck to 4 servings of veggies, 3 servings of fruit, 3 servings of carbs, 1 serving dairy and 4 servings protein. I plan to get strict again and start another round next Monday.


My breakfasts this week have been a mix between smoothies and pancakes. This smoothie is a cup of strawberries, 2 cups spinach, 1/2 cup Trop50, 1/2 cup water, 1 T chia seeds, 1 banana (3 purple, 2 green, 1 yellow, 1 orange). It's a great way to get some good servings of veggie and all my fruit in for the day. Especially great for the weekend when I tend to not eat enough fruit.


Another fave is these Skinny Confidential pancakes. I blend two eggs, one banana and 1 T chia seeds in the blender with a drop of vanilla extract (1 red, 2 purple and 1 orange). Sometimes I eat two with peanut butter and a dash of cinnamon but this time I ate the whole stack and was satisfied for hours. Even G was surprised at how similar to pancakes they actually taste. 


Lunches this week have been a protein shake. I blend 2 cups spinach, 1 banana (really adds the creaminess!), 1/2 cup coffee, 1 scoop vanilla protein, and 2 cups ice (1 red, 2 purple, 2 green).


My snacks this week have been a cup of blue berries mixed with Greek yogurt (1 purple and 1 red).


Tuesday night we checked out this brewery with friends. I was daring and got this Omoni Burger which had spring greens, beef, garlic soy onions, roasted red peppers in fish sauce and cheddar with fries. SO GOOD. I'm so glad I took a chance and tried something new! I ate half.


Annnnnd had one beer. I don't know if it's because I haven't had much alcohol lately or what but this one beer made me really tipsy. It was a delicious raspberry wheat and it was worth it.

I was terrible at taking pictures of my food the rest of the week. Maybe I was just too busy enjoying the moment.

We had friends over Wednesday night and had salad and lasagna with a glass of red wine. We ate leftover lasagna and salad Thursday night and probably tonight too.
