I'm linking up with Rachel today and showing you what we ate last week.
Monday - Turkey, Avocado Lettuce Wraps. This was a new one for me as I usually use Laughing Cow Cheese, but the avocado was an incredible substitute. This meal will be in the menu plan weekly because it's so delicious, so easy, so healthy and so refreshing on a warm summer evening.
Tuesday - Johnsonville Turkey Brats (I forgot to take a picture!) with edamame. It was the perfect meal on a warm, sunny day to grill out and eat dinner on the deck.
Wednesday - Mex Bowl consisting of low sodium black beans and half an avocado. This is an oldie but a goodie in our house. We eat this meal at least once a week because it's quick, healthy and delicious!
Thursday - Turkey Lettuce Wrap with Laughing Cow Cheese. I told you I was addicted! So. Good.
Friday - Crockpot Salsa Chicken in lettuce wrap. I usually serve this meal over brown rice, but since I'm trying to cut back on carbs I used lettuce and it was still amazing. I didn't even miss the rice!
Saturday - Pesto Pasta Chicken. This was a new recipe we tried and it was a huge hit. We loved this and will definitely make it again! The trick is keeping the portions to one cup (320 calories) and eating a salad because it is rich. We added artichoke heart and onions which really pushed this recipe over the edge of amazingness.

OMG so healthy and gooooood! I love avocado, these meals are right up my alley :D
