Fit Friday: Operation 40

I feel like I say this everyone week, but this week I really mean it! I am going to step it up! I know what I need to do so I just need to do it. Eat more fruits and vegetables. Eat healthy on the weekends. Be stricter on my eating during the week. So far so good. Garth and I are on a mission and summer is coming so it is either now or never. 

Here are the stats this week:

Pounds Lost:  0 lbs
Pounds to Go: 33 lbs

I have been weighing in everyday to help keep myself accountable. It was shocking when I got on the scale on Monday. Yikes! I had gained 5 pounds over the weekend. Whoa! Luckily I lost it all by Wednesday, but that is just crazy. I must watch what I eat a lot more during the weekends. No wonder I maintained today! I maintained my original loss, but actually lost five this week. I plan to keep on keeping on and repeat this next week so I can lose another 5 pounds. I just have to NOT gain over the weekend. Challenge accepted.

My work out schedule looked like this:

Sunday - Rest
Monday – Shred Level 3 and Walked 3 miles on lunch with co-workers
Tuesday - Shred Level 3 
Wednesday - Shred Level 
Thursday - Shred Level 3 and Walked 3 miles on lunch with co-workers
Friday – Shred Level 3 and Walked 3 miles on lunch with co-workers
Saturday – Run 2 miles with Garth



My co-workers and I actually tracked our route on our phones and realized we were actually walking about 3.33 miles on our lunch at an average rate of 16 minute miles. It has been fun tracking our progress and trying to beat our old times! The weather has continued to be gorgeous in these parts so our walks have been a welcome breath of fresh air. You will notice from the picture above that the ladies' restroom has become our locker room with our tennis shoes, change of clothes, deodorant, perfume, etc. Ha!

I didn't get around to a meal plan this week, but we stocked up at Trader Joe's and were prepared for healthy eats this week. My newest find from TJ's was a recommendation from my SIL and a new favorite in our house. Sour Cream and Onion Puffs:


They are light, flavorful and the best part is they only have 140 calories for 2.5 cups! Here are a few more of our eats this week:

Sunday - We were pretty full from our brunch, but we did eat leftover chimichangas later that evening on the deck. They were just as good!


Monday - Garth grilled cheeseburgers on the deck with corn on the cob. YUM. I love BBQ season.



Tuesday - Grilled chicken and onion with a side of edamame (not pictured). I ate a small plate to trick myself into thinking I was eating a lot and actually couldn't even finish this piece! I guess the trick worked.



Wednesday - Trader Joe's Fusilli with Vegetables and Basil Pesto. This was actually really good and only 380 calories. The zucchini and tomatoes were the best part. Just so full of flavor. I will definitely purchase this frozen meal again. It was great in a pinch. I worked late and had loads of laundry to do and didn't feel like cooking and this was a great solution.


Thursday - Crockpot Chicken Curry. An oldie but a goodie in this house. I nix the sour cream, serve it over brown rice and enjoy. I love coming home to dinner already done. Have I mentioned lately how awesome my crock pot is?!

Tonight is our cheat night. We are going to allow ourselves one cheat night and Friday just seems to be the best day. We can eat whatever we want for dinner. We limit it to one meal so we don't get too crazy! This weekend will be tough though. I have a baby shower on Saturday and we are going to my aunt's house on Mother's Day. I just gotta stay strong! Stick to filling up on fruits and veggies. Exercise. Drink lots of water. It is all about moderation!

Well you did better than me cuz I had a cheat week! One of weeks where we ate out more than in. Next week will be better :-)
