Menu Monday: Whole Living Edition

Week One of the 2013 Whole Living Challenge has begun! I'm a picky eater and these are the recipes that sounded the best to me so I will buy the ingredients for these in bulk so we can eat these meals for lunch and dinner and the weekend. I don't tire of things easily so this plan suits us just fine. Here is the meal plan for the week:

Monday - Creamy Broccoli Soup
Tuesday - Cauliflower "Rice" Stir-Fry
Wednesday - Leftovers
Thursday - Red Lentil and Sweet Potato Stew
Friday - Creamy Broccoli Soup

My breakfasts will be a mix of Pineapple Spinach Juice and Green Lemonade. If I'm feeling adventurous I might try the Blueberry-Mint Smoothie. What's on your menu this week?

Walnut and Rosemary Oven-Fried Chicken
I'll probably serve that with roasted brussels sprouts

Broiled Tilapia Gyros - we've made these before and they are great! I'll use a half of a whole wheat pita instead of the flatbread.

Sous Vide Pork Tenderloin with Celery Root Puree and Pickled Apples - The recipe calls for pork cheek but pork tenderloin is much easier to find and leaner. I made the celery root puree last night (using skim milk instead of heavy cream) and it's fantastic. Can't wait to eat the composed dish.

Spinach Salad With Salmon, Barley, and Oranges - I've made this one before too, it's full of power foods and delicious. I will cook the salmon sous vide instead of in a pan because the texture is so much better and I can use less oil.

And I'm sure there will be a night or two of leftovers. I hope you enjoy your month of clean eating!

I'm excited to see how this goes for you, I checked that site and love the idea- but sounds awefully intense! Good luck!
