Menu Monday: Biggest Hits

Garth has officially started training for his marathon. Bless his heart, he was up at 5:30 a.m. on Saturday morning running with the guys. That is early, but he is dedicated! Since I am not running, I am showing support by doing all the grocery shopping, meal planning, and cooking to ensure he is fueling his body properly with protein, veggies, fruit, and whole grains. Last week was a success and I tried to take pictures to keep myself accountable to actually cook everything I had planned. This week will hopefully be even better. I'm pulling out the all stars. The favorites. The biggest hits in our home that we know are delicious, relatively easy to make, healthy, and make great leftovers for lunch.

Monday - Slow Cooker Salsa Chicken. I love this recipe, it is just so easy! It literally took me five minutes to throw it all together and it will be ready when we get home tonight.
Tuesday - Veggie Pizza. It was so good last week, it just needed cheese so I want to perfect it this week.
Wednesday - Cheesy Chicken and Wild Rice Casserole. I love a good casserole and need some comfort food in my life.
Thursday - Broccoli and Cheddar Quiche with Brown Rice Crust. This is def a favorite around these parts. So good!
Friday - Falafel Pitas with Cucumber-Yogurt Dressing. This dressing is to die.
Saturday - Mexican Casserole. This has been in the weekly rotation for months now and we are not tired of it yet.
Sunday - Leftovers

Salsa chicken is my favorite go-to dinner meal! Love it! Your menu sounds great! I need to get back into planning our dinners..

I've tried some different variations to salsa chicken & it's all so yummy! I've used italian dressing & buffalo sauce and it all turns out perfectly and is such a great meal for leftovers!

i LOVE salsa chicken...and if you've got leftovers, put them in a pot with a can of diced tomatoes and some chicken stock..it makes great chicken tortilla soup!
