I have not done menu planning in several weeks and we have slacked and ate way too much take-out. It's time to get back on track so here is the menu for the week:
Monday - Mystery Dinner. Garth is going to grill something on this beautiful day, but he isn't telling me what he's making. I love surprises!
Tuesday - Four Cheese Baked Penne
Wednesday - Double Bean Burritos
Thursday - Chicken with tomatoes and olives
Friday - Roasted Veggie Lasagna
We eat a lot of chicken off the grill which is healthy, but I wanted to incorporate more vegetarian options into our meal plan this week and eat less meat. I'm excited to get back into our routine and start having fun cooking together. I have missed it!

We are in the same boat. We have had too much take out too! Just last week I started to cook everday again. :)

We just made a roasted veggie lasagna using thinly sliced zucchini as noodles. Yum! Hope you enjoy your eats this week.
