The week in review:
Monday: Asparagus Whole-Wheat Pasta. This was the recipe I was most excited to make but it just was not good. I think the issue was the recipe called for boiling of the asparagus. The result was mushy, slimy and it ruined the meal for us.
Tuesday: Baked chicken, edamame, and oven-roated potatoes. Always a winner with us. Yummo!
Wednesday: Steak and brussel sprouts. Another great recipe in our rotation. Delish!
Thursday: Having dinner at a friend's house. We had a yummy meal of hot dogs, fruit, corn on the cob, and chips.
Friday: Tuna melt with baked chips. We were doing so well, so we went out to dinner.
So we did pretty well last week. Here is what is on the menu for this week:
Monday: Spaghetti.
Tuesday: Chicken fajitas.
Wednesday: Tomato and goat cheese pizza.
Thursday: Easy Quiche.
Friday: Refried Bean Pablanos with Cheese.

Mushy asparagus can definitely ruin a meal!
We've got pork tenderloin, chicken fried rice, & tacos on the meal plan for the week!
What a bummer about the asparagus meal, I printed that one out too. I wonder if it was just overboiled? Good luck this week!
