Fit Friday

I'm doing well, but lets be honest. I am only on Day 4. One day at a time. I haven't even weighed in yet. I'm not ready yet. I have found that asking myself "Will this bring me closer to my goal?" when deciding on food choices is helpful. Especially when I'm being tempted like at a ladies' breakfast at work. Ohhh those cheesy potatoes were calling my name, but I stuck to a healthy egg white spinach quiche and fruit and was just as satisfied. 

My workouts have been going great this week. I have felt strong and it is great to get back into my rhythm of working out and having a good sweat. It is my "me" time to zone out, work hard and I always feel so refreshed afterwards. 

Thank you all from the bottom of my heart for your comments on this post. This is the reason I share this journey with you. I need your advice, encouragement and ideas. So thank you. I will look into the nutritionist option and see if my health insurance covers it. I also want to assure you I'm not starving myself. I know I work out hard so I know that if 1200 calories isn't doing it I will eat something. It just won't be cheez its. I'll grab an apple, carrots, or edamame. I truly am trying to listen to my body, but I just feel like I'm always hungry. I am going to go the doctor this month for a check-up to make sure nothing is seriously wrong (thyroid issue?) because I always feel hungry. So annoying. 

I found some great foods that help fill me up with fiber and protein without leaving me hungry an hour later. Here are some of my eats this week:


Clif Honey & Oat Granola Bars are a new favorite. 


I made these oatmeal muffins for the work breakfast and they were a hit!  I had one left and it made a great breakfast paired with cottage cheese.


Tuesday night our small group plans fell through and I had nothing planned for dinner. I knew I didn't have the self control for take-out or going out to eat so I told Garth he was on his own and I made this Stoffuer's Spinach Souffle. Don't mind the horrible photo. I like portioned food. I just do better that way. Paired with edamame it was a very satisfying meal and much better than greasy Chinese.


I am also obsessed with chocolate coated almonds as a mid-afternoon snack. I was getting tired of almonds, but these totally made me love almonds again!

Wednesday night I redeemed myself and threw together Slow Cooker Chicken Chili. It is a favorite around these parts and so healthy and delicious. It also made great leftovers for dinner Thursday night. Love that!

You are inspiring to keep going and trying. I don't post much about this, or much at all lately o_0, but I feel like I'm a journey with you. You can do it and yes, those are all good choices in snacks and food... I think I'm hungry now too lol
