Fit Friday: South Beach Week 1

Week 1 of The South Beach Diet is complete! It wasn't even that difficult to eliminate carbs. I guess I hyped it to be so much more difficult in my mind.



I have a new favorite lunch: Italian Chicken Salad. Basically, I threw a bunch of frozen chicken into the crock pot with a bottle of Italian Salad Dressing. I let it cook for nine hours so when I was ready to leave for work I cut up some of the chicken and tossed in the lettuce with a bit of feta cheese. Amazingly flavorful!



Another favorite lunch this week was Laughing Cow Cheese spread on lettuce and wrapped in tuna. I didn't even miss the bread! I also discovered turkey in lettuce with Laughing Cow. AMAZING. Even Garth loves it! Such a delicious lunch. We both ate these lettuce wraps every day and didn't miss the bread.


Pounds Lost: 2 lbs
Pounds to Go: 32 lbs


As Phil from Duck Dynasty would say, "now we're cookin' with peanut oil!" It's not as much as I wanted to lose after eliminating carbs, but it is so nice to see the scale moving! I'm pumped and ready to keep on keeping on. I think I'll start incorporating carbs in again since I know I can lose 2 pounds a week with carbs in my diet. But my plan is to stop eating them by noon.

I think the South Beach works great for some people, like Garth. He lost 7 pounds. SEVEN this week. I'm so happy for him! But he is just more of a meat guy. He could eat steak and ribs all day long where as I like my pasta and my rice. But I feel more confident about my journey now more than ever. 

I've been reading Women, Food and God and it revolutionizing my way of thinking about food. I plan to do a whole post on it very soon. But to sum it up, I'm learning to listen to my body. Eat when I'm hungry. Stop when I'm at a full level of about 7. I am learning to eat to nourish, not just for the fun of it. Or because I'm bored. Tired. Stressed. Had a bad day. I never thought I was an emotional eater, but after reading this I realized more and more that I am. It's a process, and it's hard, but I think I'm finally getting to the root of the issue and that is progress.

My work out schedule looked like this:

Sunday - Rest
Monday - Ripped in 30 Level 2 and walk 3 miles with coworkers 
Tuesday - Ripped in 30 Level 2 and walk 3 miles with coworkers 
Wednesday - Ripped in 30 Level 2 and walk 3 miles with coworkers 
Thursday - Ripped in 30 Level 2 and walk 3 miles with coworkers 
Friday - Ripped in 30 Level 2 and walk 3 miles with coworkers 
Saturday - Run 2 miles with Garth

Congrats!

I know I could never give up carbs... but I know I've cut back.

I also never thought I could give up meat, but I did :) guess its all a mindset.

its always so unfair - men loose weight just be sleeping. So wrong!

Great job on the 2lb loss! That's awesome! I'm an emotional eater & it definitely showed this past week. I found this e-card online that said "you're bored, not hungry, get out of the kitchen" & I think I'm going to print it and hang it on the refrigerator. :)
Keep up the great work!
P.S. Great idea about the italian dressing & chicken in the crockpot!
