Menu Monday: South Beach Edition

I mentioned last week that Garth and I were on a mission to lose 40 pounds. We have the most success when we run and eat as close to the South Beach diet as possible. We allowed a few cheats over the weekend since we had plans with friends Saturday night and a surprise 70th birthday party on Sunday. It was all about moderation though. We knew we had these events on our calendar so we kept our other meals light and our workouts intense so we could enjoy a few treats.


Sunday - Breakfast Casserole


Monday - Pesto Ranch Crock Pot Chicken with a side of roasted brussel sprouts


Tuesday - Grilled Chicken with Lemon Vinaigrette Asparagus

Wednesday - Leftovers


Thursday - Crockpot Balsamic and Onion Pot Roast with Pureed Garlic Califlower

Friday - Leftovers

Saturday - Grilled Chicken Caesar Salad

We did south beach years ago and had some many geat recipes from their cookbooks! Maybe I will have to go dig some up out of the archives and add them to our menus soon!
