Menu Monday

Last week was a doozy. We ate super healthy in preparation for the marathon this past weekend. Garth mostly just grilled lean meat and I just steamed or cooked veggies and rice. Easy week on the meal planning front in our household. I have tons to catch you up about Chicago and the race and lots of pictures to download. But for now I will share our meal plan from last week:

Monday – Chicken Stir-Fry. Garth grilled the chicken on the grill while I cooked the cauliflower, broccoli, red pepper, and onions on the stove. Then I realized I was out of brown rice so we ate this with noodles instead with a splash of Low Sodium Soy Sauce.

Tuesday – Grilled steak and onions with brown rice, broccoli and cauliflower. Basically I mixed it all together with a bit of soy sauce and made Steak Stir-Fry while Garth ate his steak separately. The man was about to run a marathon, he can have his steak and eat it too.

Wednesday – Tuna melts on whole wheat bread with carrots. I like Sargento Lite String Cheese and Garth prefers a slice of Cheddar cheese on his. Corn on the cob on the side.

Thursday – Leftover turkey brats (Johnsonille) with a whole wheat bun and edamame. Forgot to take a picture because I was in the midst of piles of laundry and too infatuated with The Real Housewives of New Jersey Reunion Part 1. Don't judge me.

Friday – Sushi. It has been a Friday night tradition of sorts and I kinda love it. Healthy. Delicious. No mess clean-up.
