Menu Monday

I cannot believe it's Monday already. Where did the weekend go? It was a good one though. After two weekends away it was really nice to be home this weekend and work on things around the house. Sit on the deck. Sleep in. Do our own thing. Go to church. Visit old friends and catch up on life. Eat fried pickles on the roof top deck. Good times.

It's back to the grind though. Unfortunately I'm getting over being sick. Being sick in the summer is the WORST. Anyways, I'm done complaining about that. Here is our menu for the week:

Monday - Grilled Chicken Caesar Salad
Tuesday - Mexican Casserole
Wednesday - Curry Chicken
Thursday - Leftovers
Friday - Spaghetti
Saturday - Out
Sunday - Veggie Pizza

It's a pretty basic meal plan this week. We have a busy week so I wanted to make it as simple as possible, but also healthy. We are in the homestretch of the marathon training so I really want to prepare the least processed foods possible that won't break the budget or require too much time. I'm also enjoying these summery meals now so I can start incorporating chili and soups into the rotation in a couple weeks. What's on your menu this week? Anyone else excited to start making fall football food?

Our week has turkey sloppy joes, taco salads, and breakfast (scrambled eggs, crubmled hot sausage, bell pepper, onion).

Fried pickles, I'm jealous!!! missed you this wknd, but you guys didn't miss any boat action, boat troubles as usual ;)

Ooh, I need to make beef enchiladas soon! :) I hope you're feeling better! I am so excited about making fall food! :) I was just thinking last week about making big pots of chili and having friends over to watch games :)
