Fit Friday

This week was a good one, though with the holiday I may have splurged a bit. Monday night I was on track with my menu plan and made Spinach and Feta Pie. It was so amazing!!!
Seriously, you MUST try this. Garth even loved it and requested I make it every week. It was so easy, delicious, and healthy.

I got a bit off track Tuesday night. We went to visit our friends' new baby, Kinsey. Is she not the most beautiful baby you have ever seen?!
Oh my goodness, I'm in love with her. So precious! She just fell fast asleep in Garth's arms. I die. So after bringing them dinner we decided to have a date night and went out to dinner. It was amazing and a lot of fun to just eat out just the two of us. I can't remember the last time we did that.

I didn't feel like cooking on Wednesday because it was a holiday. And we were tired and sunburned from laying in the pool all day so we just made a Trader Joe Spinach Pie. At least we didn't get take-out though, right?! Which may be why I maintained this week, but I'll take it.


How funny is this picture? We set out the pool under our deck and Zoey, the dog we are dog-sitting this week, went in and laid down. Hilarious!

I was finally back on track with meal planning Thursday with Chicken Stir Fry. This is such a great, easy, healthy summer recipe. I forgot to take a picture, but trust me on this. It was divine.

My workout schedule this week was:

Monday - Elliptical (30 minutes)
Tuesday - Jillian Michael's Ripped in 30 Level 3
Wednesday - Elliptical (30 minutes)
Thursday - Jillian Michael's Ripped in 30 Level 4
Friday - Elliptical (30 minutes)
Saturday - Bike while Garth runs

Garth has been running a lot more lately. His schedule is so much more intense. It looks something like this:

Sunday - Cross-training
Monday - Run 3 miles
Tuesday - Run 5 miles
Wednesday - Strength & Core
Thursday - Run 4 miles
Friday - rest
Saturday - run 10 miles

Crazy, huh?! And with the temps in the 100s this week it has been killer. Poor guy! But you can still donate to the cause. Click here to help make wells in Africa a reality and lets double his goal!!!

I know this post is all over the place, but I also had to share this blog I'm obsessed with and may use to incorporate new meals into our rotations this summer. How are you all doing?

You must love spinach!!! I kid!! Did my egg mug this morning...not too shabby, but I think I need to cut back the time. It sounded like a bomb went off.

We have that same pool! I'm in it every day after work. It cracks me up the big floaties you have in it. I have a smaller, seat sized one. Perfect for a beer and a magazine! That pool is a lifesaver this summer.
