Menu Monday

Ok, back to the grind and back to meal planning again. As amazing as vacation is, it is nice to get back into a routine again. And with Garth running a lot more often and a whole lot longer these days, I think Saturdays will become my prep day for all these meals. We'll see how that goes along with my couponing each week. I hope I don't get overwhelmed and it becomes habit.

Monday - Chicken and Broccoli Stir Fry in Slow Cooker. I don't think it gets much easier than this recipe! And getting to use my slow cooker in the summer? Yes please!
Tuesday - Spinach Salad with Chicken, Avocado & Goat Cheese
Wednesday - Leftovers
Thursday - Grilled Cilantro Lime Chicken
Friday - Date night!
Saturday - Grilled Vegetable Pizza. We need to mix it up and have a vegetarian night because we are eating too much chicken this week. And this will be the perfect post-run meal for Garth, yummy!
Sunday - Slow Cooker Salsa Chicken. Perfect for lunch after church and leftovers for dinner!

I use my slow cooker at least twice a week! Have you seen the slow cooker liners that make cleaning up that much easier?! Love those things!
