Menu Monday.

So one of my resolutions was to cook 3 times a week. Garth and I ate a lot of frozen meals and take-out and we wanted to start eating in to save money and our waistline. We thought we should start out with just 3 meals since some nights we have double date plans and some nights we work late and don't feel like cooking. This allowed for some flexibility and it worked for us this past week. I am not gonna lie, these recipes are super easy but you got to start somewhere, right?
Last Monday night I made black bean and cheese burritos (though Garth made his into a quesadilla) and Garth LOVED them! He didn't even realize they were fat-free!! The recipe is from Jillian Michael's book Making the Cut and was so easy and delish that I thought I would share the recipe:
Serves 4
1 (7-ounce) can chipotle chiles in adobo sauce
1/2 cup low-fat sour cream
1 (15-ounce) can low-sodium fat-free black beans, drained and rinsed
4 (8-inch) La Tortilla Factory low-carb tortillas
Cooking Spray
1 cup low-sodium bottled salsa
1/2 cup (2-ounce) fat-free shredded Monterey Jack cheese
Preheat oven to 350 degrees.
Remove one chile from can. Chop chile. Reserve remaining adobo sauce and chiles for another use. Combine sour cream and chile in a medium bowl; let stand for 10 minutes.
Place half of beans in food processor; process until finely chopped. Add chopped beans and remaining beans to sour cream mixture.
Spoon 1/2 cup bean mixture down the center of each tortilla. Roll up tortillas, place seam side down, in an 11 x 7 inch baking dish coated with cooking spray. Spread salsa over tortillas; sprinkle with cheese. Cover and bake for 20 minutes or until thoroughly heated.

Tuesday night I made breakfast sandwiches with egg whites, fat-free cheddar cheese, and Morning Star sauage on a Thomas' whole wheat english muffin. It was a hit - Super filling and only 262 calories.

Wednesday night we had sushi with some friends, but Thursday Garth made chicken with olive oil and salt and I made steamed veggies. I forgot to take a picture (oops), but it was yum!
One week down, 51 to go!

Great job on the cooking front! I've learned that Weight Watchers recipes are great and easy too. Is this from a Jillian Michaels cookbook? I didn't know she had one.. pls share!

So I deleted my last comment because there was a typo and typos really bug me! I think I have issues LOL

I love any kind of Mexican recipe. If you and Garth are fans of fish, you should try fish tacos or fish taco salad. Just grill the fish (talapia is best and inexpensive)and throw it in a taco with your favorite taco sides! It's SO good and easy!

Good job on the cooking! I have made burritos & quesidillas like that before -- yummy! Cooking at home is WAY cheaper -- we learned that the hard way.

Good for you guys! I also try to make most our meals at home so we can save money and eat healthier. I used to cook alot more before I got pregnant but I am trying to get back into it. Great ideas! My hubby would love the bean burritos!
